Pistachio cake


Oh dear reader, this is so simple to make. And it comes out of a box! Two boxes, to be exact, but a box. No measuring dry ingredients, no whisking, no adding wet to dry. Open the box, add eggs, water, oil and ta-da!— you have cake. Delicious, light, fabulous cake.

Here's what you need:
1 box classic yellow cake mix, any brand
1 box of pistachio pudding mix
4 large eggs
1 cup of water
1/3 cup of oil
a dribble of green food coloring (optional)

Coat a bundt pan with cooking spray, or butter and flour to prevent the cake from sticking. Preheat oven to 350 degrees.

Mix all ingredients. Pour into pan. Bake for 50 minutes or until a knife or toothpick inserted into the center comes out clean.

Really.

It's that simple.


And can I just tell you, the inside of the cake is moist and light and the outside is a little crunchy, and the flavors are very subtle, and the combination is nothing short of delicious. Isn't it pretty? Perfect for St. Patrick's day, don't you think?

Dust with confectioner's sugar and try very very hard not to eat the whole thing.

  2. LOVE the idea!! Green food coloring and all. And this is so much easier than the green shamrock-shaped rice krispie treats I made last year.

    I second Kristen's comments...this cake is a winner...my kids LOVE it....actually, everyone raves about this cake...it travels well too...
    And the options....cupcakes, loaf pan...drizzle icing or sprinkle a few nuts on top...
    You have to give it a try!
